Preheat oven to 400°F.
Core and dice enough apples to make 1½ cups.
Combine ¾ cup sugar and water in a medium saucepan.
Bring to a boil, reduce heat to medium, and cook for 5 minutes.
Add the diced apples and cook until they begin to soften.
Combine Bisquick, 2 tablespoons of sugar, and cream in a bowl. Mix just until combined.
Drop the Bisquick dough by spoonfuls into a baking pan.
Carefully pour the hot apple mixture over the dough.
Sprinkle cinnamon evenly over the top.
Cut the butter into small pieces and scatter them over the cobbler.
Bake at 400°F for approximately 20-25minutes, or until baked through and golden.
Serve warm, preferably with vanilla ice cream.
