Ingredients

  • 2 tbsp. Olive Oil
  • 13.5 oz. Smoked Sausage or Kielbasa Sliced into pieces
  • 1 Sweet Onion Finely Diced
  • 1 Green Bell Pepper Finely Diced
  • 1 Red Bell Pepper Finely Diced
  • 1 tsp. Garlic Minced
  • 2 C. Instant White Rice
  • 1 tsp. Paprika
  • 2 ½ C. Chicken Broth
  • 2 C. Mild Cheddar Cheese Shredded and Divided
  • 1 tsp. Crushed Red Pepper Flakes
  • 1 tsp. Sea Salt
  • 1 tsp. Black Pepper
  • ½ C. Butter Sliced Into Small Pieces
  • 1 Bag Broccoli Florets Frozen
  • Green Onions Chopped for Garnish (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned on both sides. Remove and set aside.
  • In the same pan, add onion and bell pepper. Cook for about 3–4 minutes until softened. Stir in the garlic and cook for another minute.
  • Add the rice to the skillet and stir for about a minute so it lightly toasts. This adds a little extra flavor.
  • Pour in the chicken broth. Add paprika, garlic powder, onion powder, salt, and pepper. Stir well.
  • Return the sausage to the pan and add the broccoli. Bring to a gentle simmer, cover, and cook for 18–20 minutes until the rice is tender and the liquid is absorbed.
  • Sprinkle shredded cheddar over the top. Cover again for a minute or two until the cheese melts into gooey perfection.
  • Grab a spoon and give it a gentle stir.

Notes

Use smoked sausage - It adds the most flavor with almost zero effort.
