- 2 tbsp. Olive Oil
- 13.5 oz. Smoked Sausage or Kielbasa Sliced into pieces
- 1 Sweet Onion Finely Diced
- 1 Green Bell Pepper Finely Diced
- 1 Red Bell Pepper Finely Diced
- 1 tsp. Garlic Minced
- 2 C. Instant White Rice
- 1 tsp. Paprika
- 2 ½ C. Chicken Broth
- 2 C. Mild Cheddar Cheese Shredded and Divided
- 1 tsp. Crushed Red Pepper Flakes
- 1 tsp. Sea Salt
- 1 tsp. Black Pepper
- ½ C. Butter Sliced Into Small Pieces
- 1 Bag Broccoli Florets Frozen
- Green Onions Chopped for Garnish (optional)
Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned on both sides. Remove and set aside.
In the same pan, add onion and bell pepper. Cook for about 3–4 minutes until softened. Stir in the garlic and cook for another minute.
Add the rice to the skillet and stir for about a minute so it lightly toasts. This adds a little extra flavor.
Pour in the chicken broth. Add paprika, garlic powder, onion powder, salt, and pepper. Stir well.
Return the sausage to the pan and add the broccoli. Bring to a gentle simmer, cover, and cook for 18–20 minutes until the rice is tender and the liquid is absorbed.
Sprinkle shredded cheddar over the top. Cover again for a minute or two until the cheese melts into gooey perfection.
Grab a spoon and give it a gentle stir.
Use smoked sausage - It adds the most flavor with almost zero effort.
